Gawd A Mighty.........................................



I just caught and ate my first Dryad's Saddle (Polyporus squamosus). I've seen them out there before but they were older and too tough. This one was spring time tender and absolutely out of this world delicious. They aren't called the lobster of spring for nothing!! Saute'ed in a little butter with some herbs d' Provence, a splash of wine and some salt. Done. Too good.
